Lamb fillet with Sun-dried Tomato couscous & Garlic scented red wine Jus

Sun Dried Tomatoes Couscous

  • 5 gm julienne parsley
  • 15ml olive oil for frying
  • 250ml boiling chicken Stock
  • Salt and Pepper

Ingredients

  • 1 packets Israeli couscous
  • 1 green zucchinis diced finely
  • 50gm sun-dried tomatoes diced finely
  • 1 small brown onion
  • 2 cloves garlic

Serves 4

Method

Step 1 Wash well vegetables and dice finely,

Step 2 Start cooking with onion and garlic with no colour on medium heat

Step 3 Add couscous and mix well, add stock and cook for 8-10 min

Step 4 on deferent fry pan Fry remaining vegetables on medium heat until just cooked approx 2-3 min

Step 5 Add all cooked couscous and vegetable together and sprinkle Julianne of parsley

Step 6 serve Couscous with Lamb and red wine jus

Lamb fillet

Ingredients

  • 2 Lamb fillet
  • 3 garlic cloves smashed
  • 1 small onion sliced roughly
  • 50ml Red wine
  • 150ml Chicken stock

Method

Step 1 Seal lamb fillet on hot frypan both sides for 1 min each

Step 2 Place in hot oven 180′c for 8-12 min or until doneness desire

Step 2 in frypan that you seal the lamb add onion, garlic drop of oil and fry for 1 min

Step 3 deglaze frypan with red wine and scrape frypan with wooden spoon

Step 4 add chicken stock and bring to boil, once boil reduce heat to medium and cook for 5-8 min or until sauce coat back of spoon
