ABC of cooking 8 weeks course

Learn the basic of cookery to enable you become a better cook. Our classes will teach you the basics of cookery from vegetable preparation, sauces, meat and fish preparation, frying, sauteeing techniques to pastry and baking. You will not only learn to read and work through a recipe in a timely fashion, but to enchance your dish and bring it to a higher level. Course will cover food items to create a 3 course meal. At the end of the lesson, you will sit and enjoy the company of each other over lunch. We will have a kitchen hands in each lesson to provide a relaxed atmosphere so you can focus on learning. Week 1: Will cover ABC of cooking from knife handling, chopping and flavours to suit your dietary requirement Week 2: Will cover fish and seafood and their condiments Week 3: Will cover Meat/casseroles, their various cuts to suit cooking methods i.e. BBQ, grilling, slow cooking etc and their condiments Week 4:  Will cover poultry and game from chicken, duck, etc their importance, quality points and various cooking methods and their condiments Week 5:  Will cover vegetarian options from stir fry, puree, rice, legumes, seasonal vegetables in season, their cooking methods i.e. poaching, grilling oven bake etc Week 6: Focus on desserts, basic sauces i.e. Anglaise, coulis etc. Week 7:  Will cover balance of flavours and creating a balanced dish from its components i.e. meat, starch, veg, sauce, garnish Week 8: Building a 3 course meal with balance of flavour, presentation and how to make it easier to prepare, cook and still enjoy the company of family and friends without being in the kitchen for too long. You will create your own restaurant by serving your family and friends 4 or 5 course meal. * guests will be charge small fee to accommodate restaurant overheads*

Knife Sharpening Workshop

The Sharpening workshop A good sharpening that extends the life of a beloved knife is one of the best investments of these recessionary times. It is of utmost importance that you steel your knives on a regular basis after they have been sharpened. Whatever kind of steel you have, if used regularly, the edges will last a long time.  Workshop This is a 3 hour workshop. It is a sharpening and blade maintenance workshop for knives, scissors and gardening implements where participants will get a theoretical understanding and hands-on experience. They will learn how to use a whetstone and a steel for sharpening. Highly reccomended to bring your own blunt knives, scissors and tools to practice on, a double-sided sharpening stone (available from good hardware shops) and a steel. Stones, steels and good quality knives will be available to purchase at the workshops. About The teacher Hilik Mirankar is a professional knife sharpener with 35 years in the trade. He sharpens knives from the back of a motobike and his business is called Slick Flick Sharpeners. You may have seen his travelling on Sydney streets.. or in many magazines.

Culinary wisdom tells us that couples who cook together stick together, so drop your old habit of take-out menus when you take a bite of the tasty dinner that you cook with other couples.

This class is for you and your sweetie to do a hands-on cooking at the state-of-the-art kitchen at Zigis Cooking School in Chippendale. You'll learn how to prepare a romantic Four course meal with hands-on instruction from esteemed Chef Zigi Ozeri.

Chef Zigi will teach you and your sweet pie cooking techniques from start to finish -- finding cooking chemistry along the way.

On Arrival: You will indulge on Glass of bubbles and the we will divide you guys into teams, canapé team will serve canapés once ready for everyone enjoyment while cooking. Entrée and Main will be serving as “Food2Share” platters on the table which provide relaxed atmosphere…

Cheese Making

Cheese is a fermented milk product made from the curds produced when milk is coagulated.  Usually it is made from cow's milk but there are many varieties made from sheep's milk and goat's milk. Cheese can also be made from the milk of various other animals.  Real mozzarella, for example, is made from buffalos' milk In this class you will make a range of cheeses including mozzarella, ricotta and labne (yogurt cheese) as you discover how easy it is to do in a home kitchen. This hands on course includes simple recipes to create beautiful tasty cheeses and some secrete recipes to get a nice bread to go along with fresh cheese.
